Thai spiced chicken recipe

500g (1lb) chicken breast, cut into cubes 2 Dollops* Hellmann's Real Mayonnaise 1 red onion 1 red pepper 1 green pepper 1tbsp Thai green curry paste 1tsp ground coriander juice of 1 lime 1tbsp honey (optional) 1 small fresh chilli (optional)

Cut the peppers and onions into 1 inch slices. Cut the chicken into cubes. Mix the mayonnaise with the peppers, onion, curry paste, coriander, lime juice and honey. Marinate the chicken cubes in the mixture and leave to stand in the fridge for 30 minutes. Pre-heat the oven to gas 6, 200°C, fan 180°C. Remove the marinated chicken and cook the cubes in the oven for 15-20 minutes, stirring halfway through. Cut into a thick chunk and check that it is cooked through, with no pink showing. Serve with rice, your favourite vegetables and add chilli peppers for extra spiciness. Cook's tip You can marinate without the peppers and onion and instead place chicken onto skewers. Grill them in the barbecue for 5 minutes and serve.
