Apple, date and blue cheese salad recipe

Ingredients
1 Kanzi® apple, cored and thinly sliced
1/2 lemon
150g (5oz) dates, stoned and chopped
2 little gem lettuce, leaves separated
40g (1 1/2oz) watercress
75g (3oz) blue cheese
For the dressing:
2 tbsp cider vinegar
2 tbsp olive oil
1 tsp Dijon mustard
1 tsp clear honey

This vibrant dish makes the most of Kanzi apples, dessert apples with a mildly tart flavour. Add to date and blue cheese for a sweet, sharp salad melange that's bursting with spring flavour. For the dressing, put the vinegar, oil, mustard and honey in a lidded jar. Screw the lid on tightly and shake well, until combined. Set aside. Put the apple slices in a large bowl, squeeze over the lemon juice and toss to coat. Add the dates, lettuce and watercress. Pour over the dressing and gently mix, until combined. Arrange the salad on a serving plate and crumble over the cheese.
