Broccoli noodles with soy, lime and chilli dressing recipe

Ingredients
250g (9oz) fresh egg noodles
400g (13oz) Tenderstem broccoli
2 carrots
4tbsp roasted peanuts
For the dressing
60ml (4tbsp) reduced salt soy sauce
4tbsp soft brown sugar
2 red chillies
1 garlic clove, thinly sliced
1 ginger
2 limes
15ml (1tbsp) rice wine vinegar

Rustling up a quick, nutritious mid week supper couldn't be easier with this delcious noodle dish. Mix the dressing ingredients in a bowl. Cook the noodles according to pack instructions. Drain and tip into a large bowl. Add the dressing and mix well. Steam the broccoli with the carrots until al dente. Toss the veg through the noodles and scatter with the peanuts.
