Beef stroganoff with mushroom recipe

Ingredients 240g long grain rice 2 tsp olive oil 1 onion 360g Beef medallion steaks, thinly sliced 1tsp paprika 200g Simply Stir Mushroom 2 medium courgettes - about 250g in total

Cook the rice according to the instructions on the pack. Whilst it is cooking, heat the oil in a non-stick pan and fry the onion for 1-2 minutes to soften, add the beef and fry for 4-5 minutes until browned on all sides. Sprinkle in the paprika and stir through the meat. Reduce the heat, add the Simply Stir and heat through for 1-2 minutes, stirring well. Cook the courgettes in a little boiling water for 2-3 minutes until tender, drain. Serve stroganoff over cooked rice with the courgettes.
