Cornish fairings with strawberry coulis recipe

Ingredients 200g (7oz) strawberries 125g (4oz) plain flour 1tsp baking powder ½tsp bicarbonate soda 1tsp ground ginger ½tsp mixed spice 50g (2oz) caster sugar 50g (2oz) butter 2tbsp golden syrup

Preheat oven to Gas 7, 220°C, fan200°C. In a bowl blend the flour, baking powder, bicarbonate of soda, ginger, the mixed spice and the sugar. Cut butter into small pieces and rub in with your fingers until it resembles breadcrumbs. Add syrup and mix until you have a smooth dough. Divide the mixture into 6 and roll into balls. Line a baking sheet with nonstick baking paper and place the balls on, spacing well apart. Gently flatten with the palm of your hand. Bake in the oven for 7 minutes. Put strawberries in a blender and whizz until puréed and smooth. Serve the fairings with some local ice cream or crème fraîche and spoon the strawberry coulis over them.
