Tofu with sweet and spicy noodles recipe

Ingredients
1tsp red chilli, finely chopped
2tsp rice vinegar
2tbsp runny honey
1 small leek, washed, quartered
1 red pepper, cut into 4cm (1½in) sticks
250g pack tofu, cut into 2cm (¾in) cubes
75g (3oz) shiitake mushrooms, quartered
1 pack tesco fresh egg noodles
drizzle of soy sauce

Mix the chilli, rice vinegar and honey together and set aside. Cut the leek into 4 cm (1½ in) strips. Place the leek and red pepper pieces in the steamer, the place the tofu cubes on top. Steam for 8 minutes. Add then mushrooms and noodles to the steamer tier above the tofu, and steam for a further 5 minutes. Put everything together in a bowl, toss in the chilli mixture and serve with soy sauce.
