Warm noodle and prawn salad recipe

For the Dressing
1 red chilli, deseeded (optional)
4tbsp lime juice
2tbsp soy sauce
2tbsp runny honey
For the Salad
300g wholewheat spaghetti
150g mangetout
250g cooked, peeled King Prawns
¼ cucumber
4 spring onions
handful chopped coriander, to serve

Finely chop the chilli and make the dressing by combining all the ingredients. Cook the spaghetti according to pack instructions. 3 minutes before it is cooked add the mangetout cut into thin strips and then drain into a colander. Meanwhile, fry the prawns with a drizzle of oil for 2 minutes until warm. Place the spaghetti into a large serving bowl. Add the prawns, cucumber (cut into strips) and shredded spring onions, drizzle over the dressing and mix together well. Serve immediately, with coriander.
