Roasted cod with cherry tomatoes, basil and mozzarella recipe

4 x 150g (5oz) cod fillets
10-12 cherry tomatoes
1 x 125g (4oz) pack mozzarella, roughly torn
small handful basil

A easy and delicious meal to rustle up for your partner or loved ones. Simply place all your ingredients in a roasting tin and bake, served with creamy new potatoes or a refreshing salad. Preheat the oven to gas 6, 200°C, fan 180°C. Put the cod and tomatoes in a large roasting tin and lay the mozzarella pieces on top. Bake for 15-20 minutes or until cooked through and the fish flakes easily. Once out of the oven, tear and scatter over the basil leaves and serve with new potatoes or salad.
