Chicken tikka drummers recipe

Ingredients
16 chicken drumsticks
500g (16oz) natural yogurt
5tbsp tikka masala paste
2 garlic cloves, crushed
2tbsp grated fresh ginger
1tbsp garam masala
For the raita
500g (16oz) natural yogurt
2 garlic cloves, finely grated
½ large cucumber, deseeded and coarsely grated
1 x 30 pack mint, leaves finely chopped
½ x 30g pack coriander, leaves finely chopped

Lightly score the flesh of the chicken drumsticks and then put them into a large bowl. Mix together the yogurt, tikka masala paste, garlic, ginger and garam masala. Season, then pour the marinade over the chicken. Mix well to coat the meat completely, then cover and chill overnight. Preheat the oven to gas 6, 200°C, fan 180°C. Cover a baking tray with foil and arrange the drumsticks on the lined tray. Cook in the oven for 45-50 minutes until the meat is cooked through with no pink showing. Meanwhile, mix the raita ingredients and season.
