Crostini with Gorgonzola and rocket recipe

Ingredients
5 slices sourdough or white bread
75ml olive oil
125g Gorgonzola cheese
170g sun-blush tomato
10g rocket

Press 20 small circles from 5 slices of sourdough or white bread using an approx 3.5cm (1½in) pastry cutter. Brush with a little olive oil, season and bake for 5 minutes in a preheated Gas Mark 5, 190°C, fan 170°C oven. Thickly spread each with Gorgonzola cheese and top with a sun-blush tomato and some rocket.
