Roasted tomato bagel recipe

Ingredients 4 medium vine tomatoes freshly ground black pepper 1tsp sunflower oil 2 bagels 60g (2¼oz) Tesco Light Choices Extra Light Soft and Smooth cheese 3tsp fresh chives, chopped

Preheat the oven to Gas Mark 2, 150°C, fan 130°C. Halve the tomatoes, season and place on a lightly oiled baking sheet, cut side up. Cook for 1 hour. Cut the bagels in half, toast and spread them with a little cream cheese. Place 3 tomato halves on one bagel half, sprinkle with chives and top with another bagel half. Repeat with the other bagel. Top each with another tomato half, a little cream cheese and garnish with the remaining chives. Tip 1 of 5 a day per serving.
