Blue cheese salad with bacon and spinach recipe
Ingredients 1tbsp lemon juice ½tsp Dijon mustard 3tbsp olive oil 200g bag washed spinach 200g (7oz) thinly sliced mushrooms 6 rashers streaky bacon, cooked and crumbled 1tbsp diced red onion 100g (3½oz) crumbled blue cheese (such as Roquefort)

Blanch the mushrooms for 15-30 seconds, then leave to cool while you make the dressing. In a small bowl whisk together lemon juice and mustard. Season to taste. Add oil and whisk well. In another bowl combine the spinach, mushrooms, bacon, onion and blue cheese. Drizzle with salad dressing before serving
