Red cabbage, orange and cashew salad recipe

Ingredients
1 large red cabbage, shredded
2 medium oranges
50g cashew nuts, lightly crushed
For the dressing
50ml olive oil
2tbsp white wine vinegar
salt
pepper

Remove the skin and pith from the oranges using a sharp knife. Segment the oranges into a bowl and squeeze the remaining orange membranes to cover the segments in juice. Prepare the dressing by whisking together the olive oil, white wine vinegar and seasoning until combined. Toss the red cabbage, cashews and orange segments (plus juice) together in a serving bowl. Add the dressing and toss well again before serving.
