Spanish ham and Manchego toasted sandwich recipe

Ingredients
40ml olive oil
8 slices white bread, crusts removed
120g Manchego, sliced thinly
100g Serrano ham
4 cherry tomatoes, halved

Pre-heat the grill to hot then brush the pieces of bread lightly with the olive oil. Toast in batches until golden brown all over. Remove and top half of the pieces of toast with the ham then Manchego on top. Place the other pieces of toast on top to make the sandwiches. Cut into 4 triangles and arrange on serving plates. Garnish with a few cherry tomato halves and some pea shoots. Serve immediately.
