Cool summer noodles recipe

Ingredients
200g (7oz) soba noodles
1tbsp toasted sesame seeds
For the dipping sauce
3tbsp soy sauce
½ vegetable stock cube, diluted with 3 tbsp hot water and cooled
1tbsp mirin
1tsp finely grated fresh ginger
juice 1 lime
2 spring onions, finely chopped

Cook the noodles in boiling salted water, as instructed on the pack, until just done. Drain into a sieve and run cold water over to chill the noodles completely. Mix together all the dipping sauce ingredients and divide between 2 ramekins. Put the noodles on 2 plates, scatter over the sesame seeds, grind on some black pepper and serve with the dipping sauce.
