Thai-style shrimp with ginger recipe
50ml groundnut oil 400g prawns, peeled, de-veined with tails intact 1 inch piece of ginger, peeled and minced 2 cloves garlic, minced juice of 2 limes 50ml light soy sauce 1tbsp fish sauce 1tbsp soft light brown sugar pepper small bunch of basil leaves

Combine the ginger and garlic in a small mixing bowl. Combine the lime juice, soy sauce, fish sauce, sugar and pepper in another mixing bowl and whisk until the sugar dissolves. Heat the groundnut oil in a large wok over a high heat until hot. Add the prawns to the wok and stir-fry for 1 minute. Add the ginger and garlic and continue to stir-fry over a slightly reduced heat for 2 minutes. Add the lime juice mixture to the wok and allow it to reduce by half. Season to taste with pepper. Stir through the basil leaves just before serving.
