Ken Hom stir fried spicy mushrooms recipe

Ingredients
1tbsp groundnut oil
2 garlic cloves, finely chopped
2tsp finely chopped root ginger
½ bunch spring onions, finely chopped
450g (14½oz) exotic mixed mushrooms (such as shiitake and oyster), sliced if large
1-2tsp chilli flakes
1tbsp rice wine or dry sherry
2tsp dark soy sauce
1tbsp vegetable stock or water
2tsp sugar
2tsp sesame oil

Heat a wok or large frying pan over a high heat and add the oil. When smoking, add the garlic, ginger, and spring onions and stir-fry for about 20 seconds, then add the mushrooms. After 30 seconds add the remaining ingredients, except for the sesame oil, and season. Stir-fry for 5 more minutes until the mushrooms are cooked, then stir in the oil.
