Leftover Vietnamese-style baguette recipe

Ingredients 15ml (1tbsp) rice vinegar (or use white wine vinegar) 1tsp caster sugar juice 1 lime small knob ginger. peeled and finely sliced 1 small clove garlic. finely grated 1/2 red chilli. deseeded and thinly sliced 4 spring onions. sliced diagonally 1 small carrot. peeled and coarsley grated 1/4 cucumber. halved lenghways. deseeded and sliced 1 half baguette batton 6 little gem leaves 125g (4oz) sliced leftover Scandinavian-style smoked gammon handful coriander leaves (optional)

Chilli. lime juice. garlic and ginger give this filled baguette a real kick ? great to keep you going after lunch! This recipe is a mouthwatering Leftover idea from our Scandinavian-style smoked gammon with parsley sauce dish. In a bowl stir together the rice vinegar. sugar. lime juice. ginger. garlic and chilli. Toss with the spring onion. carrot and cucumber. Slice the baguette in half lengthways and fill with the little gem leaves and gammon. Spoon over the carrot mixture and scatter over the coriander leaves if using. Cut into 2 to serve.
