Sweet onion relish recipe

Ingredients
1 tbsp vegetable oil
4 white onions, finely sliced
small knob ginger, peeled and finely sliced
1 garlic clove
1 tbsp mustard seeds
3 tbsp brown sugar
30ml (2 tbsp) white wine vinegar
100ml dry white wine
bunch fresh dill, chopped
1 x 200g (7oz) tin sweetcorn

Add a sticky and sweet onion relish to your burgers, hot dogs or sandwiches to really spruce up your summer recipes. Heat the oil over a medium heat in a deep pan, add the onions, cover, and cook for 10 minutes until the onion has softened. Add the ginger, garlic and mustard seeds and cook gently for another 5 minutes, stirring occasionally. Mix in the sugar, vinegar and white wine. Stir in the sweetcorn, and then simmer the mixture for a minute or so until the sugar has completed dissolved and the wine has reduced. Add the chopped dill to the pan, and season to taste. Allow the relish to cool before serving on hotdogs, burgers - and in cheese sandwiches to make them extra special.
